Rayado means “stripy” in Spanish, named after the light stripes that appear on its coffee cherries. The cherries from this variety are also larger than those of the Borbón tree. We love Rayado because it represents a chance to let nature diversify. Traditionally, only a few varieties are grown commercially due to their resistance to disease and high yields. But by allowing and cultivating more diverse varieties like Rayado, we reduce the risk of a single disease wiping out entire species.
